Gummy Bear Thyme
Our South Congress team at Prim and Proper were given a challenge: take one secret ingredient from The Marketplace and create a mind-blowing cocktail in ten minutes. The winning recipe from this challenge came from the blood, sweat, and tears of our own, Chef Travis, who, candidly, had a slight upperhand after is years in the mixology field. The following is his recipe for Gummy Bear Thyme, featuring Behave's Sour Gummy Bears.

Ingredients
1 sprig Fresh Thyme
1/4 oz Green Chartreuse
2 oz Ford's Gin
1 oz Grapefruit Juice
1 oz Behave Sour Gummy Bear Syrup* (recipe follows)
1/2 oz Sangrita** (recipe follows, or substitute grenadine)
Top with Jarrito's Grapefruit Soda
Garnish: Orange Twist
*Behave Sour Gummy Bear Syrup
1 pkg (1.8 oz) Behave Sour Gummy Bears
2 oz Boiling Water
Combine gummy bears and boiling water in a microwave-safe container and stir to melt. If gummy bears don’t melt completely you may microwave the mixture at 10 second intervals until full combined. Use immediately; do not refrigerate.
**Sangrita
1/2 cup Pomegranate Juice
5.5 oz Canned Pineapple Juice
1 cup Granulated Sugar
1/8 cup Sliced Fresh Ginger
Combine pomegranate juice, pineapple juice, and sugar in a saucepan over high heat. Bring to a boil, stir to dissolve sugar, and remove from heat. Add ginger and puree in a food processor. Strain through a fine mesh strainer. Allow to cool, store refrigerated.
Recipe
Step 1: Place thyme sprig in a Collins glass and drizzle with chartreuse. Step 2: Separately, combine gin, grapefruit juice, gummy bear syrup, and grenadine in a shaker tin, then top with ice and shake.
Step 3: Light the chartreuse in the Collins glass on fire and allow to lightly burn the fresh thyme sprig.
Step 4: Top the Collins glass with ice to extinguish the flame, then strain the cocktail into the Collins glass.
Step 5: Top with grapefruit soda and garnish with an orange twist.
Step 6: Enjoy!
